PB&J Granola



Made with creamy peanut butter, a hint of honey and a sprinkle of sea salt, this tasty and filling granola is a good way to start the day. It's not too sweet. You could add a few spoonfuls of sugar to the recipe to make it sweeter. But, I was after something more natural. Raisins give it a PB&J-vibe. Sea salt enhances all the flavors. With cold milk, it's delicious. Your kitchen will smell divine as it bakes. 

This granola keeps for weeks in an airtight container. It's easy too. I usually make it on a lazy Sunday afternoon, mixing everything directly on a large baking tray and popping it in the oven. Turn it into trail mix by adding some chocolate chips, banana chips and peanuts, great for long hikes and summer camping trips. Get your crunch on!

 





PB&J Granola Recipe

Make 4 Cups

Some Notes: 

Make sure your peanut butter doesn't have added sweetener or other ingredients. The ingredients label should read: peanuts and salt.

Ingredients


  • 4 cups of  rolled oats (do not use instant)
  • 2/3 cup of real creamy salted peanut butter. I use organic. 
  • 2/3 cup of honey 
  • 1/3 cup of oil. I use sunflower. 
  • Sprinkling of salt. I use sea salt.
  • 1 cup of raisins 
Mix-ins: chocolate chips, salted peanuts

Instructions


Preheat the oven to 350. Line a a large baking tray with foil or baking paper.

Mix the honey, peanut butter and oil in a bowl. If this mixture isn't pourable then microwave it for a few seconds. In a large bowl or directly on the foil-lined tray, mix the oats with the peanut butter-honey sauce. Spread the peanut butter and honey coated oats in a single layer on the tray. Bake for 10 minutes. Stir and continue to bake for another 5-10 minutes, keeping a watchful eye for burning. Take out of the oven once the granola turns golden brown. Sprinkle with a little salt. Let cool before adding the raisins or mix-ins.
